Banana Bread

Freshly baked banana bread is always a nice breakfast to wake up to. I like it, hubby and baby really, really like it. Plus, it’s a really great way to “recycle” those overipe black-spotted bananas. Well actually, I’ve been known to let them go overipe – the uglier the better.

1 1/2 C + 2T flour
1 t baking soda
1/8 t cinnamon
1/4 t salt
1 t vanilla sugar
2 eggs
10 T light brown sugar, lightly packed
1/2 C butter, melted
3 large overipe bananas, mashed (about 1 1/2 C)
2 T creme fraiche
about 1/2 C chopped walnuts

1) Combine dry ingredients.
2) Beat sugar and eggs at medium-high speed for about 10 minutes.
3) Add butter and beat until incorporated.
4) Add creme fraiche and bananas.
5) Add flour mixture.
6) Put in loaf pan and top with chopped walnuts.
7) Bake at 350F for about 1 hour. Cover with aluminum foil (perforated all over to let steam out) for first 40 minutes. Remove foil and bake until toothpick inserted in middle comes out clean.
